Edit: it seems as if all you need to do is mix with hot or boiling water and that will help integrate everything. Still not sure if lecithin/xantham gum is required if this works

Adding an emulsifier like xanthan gum or lecithin would be the easiest, but you can also heat it gently while stirring.
As for the lime juice joke: there is merit to that since the acidity from the lime juice also helps with homogenisation, akin to how you make a vinaigrette.
Actually, there is already everything necessary to simply add boiling water and it all blended nicely
OP why not just… buy coconut milk? Because if you have the option to buy coconut milk, it makes no sense to try to DIY it from something else.
- I want pure coconut stuff without all the fillers and random stuff in the regular milk
- I feel like I can make it cheaper/in bulk more than the regular stuff
- I feel like they skimp on the good shit (coconut cream part) and fill it with a bunch of other nonsense to replace the skimped cream

The coconut cream I can find has the exact same ingredients as the coconut milk from the same brands. It just differs in the amount of water. i.e coconut cream is coconut, water and guar gum. Coconut milk is coconut, water and guar gum. The guar gum is there to help the coconut fat mix with water. You are discovering why that emulsifier is there.

There is a reason most people do not do what you are trying to do. There are things that are worth making and things that aren’t. What you are going to find is that coconut milk falls into the “dont bother making it yourself unless you literally cannot buy what you want” camp. You seem to want something that is inbetween coconut cream and coconut milk and the reality is that you’re probably going to end up mixing the two to get what you want and that isn’t going to be cheaper. You need to decide whether you want something cheap or good because you cannot have both.

You get what you pay for. Cheaper coconut milk is going to have more water in it. Thats why it is cheaper. The very cheap coconut milk may not even have coconut as the main ingredient besides water.
